Lasagne Recipe | Low Carb | Gluten Free

A healthy low-carb, gluten-free alternative to pasta in this Italian favourite recipe — lasagne made with mince or tuna. My children ate it without noticing the gluten free “pasta” substitute.

Ingredients (makes 2-3 portions)

  • 2 Medium Onions
  • 2 Cloves of Garlic
  • 1 Tablespoon of Coconut Oil
  • 500g Beef or Turkey Mince (can substitute for 3 cans of 112g drained Tuna)
  • 10 medium sized Mushrooms
  • 500ml organic Passata (or chopped tomatoes)
  • 150g Butternut Squash (this will be used to make the “pasta” sheets)
  • 2 Tablespoons of grated cheese

Making The Lasagne Pasta Sheets

  • Peel the butternut squash
  • Slice off the ends
  • Cut off the bulbous part (it is hard to slice, so discard and use for a different meal)
  • Use a mandoline to slice the shaft into thin slices, to make the pasta sheets

Directions

  1. Preheat your oven to 200°C / 400°F
  2. Fry the onions and garlic in coconut oil in a pan
  3. Add and cook the mince
  4. Put in the rest of the ingredients and cook through (except for the squash sheets and the cheese)
  5. Get a 8 x 10 inch baking dish, at least 3 inches deep
  6. Spoon enough of the pan mixture to cover the bottom of the dish (otherwise the squash sheets will stick to the dish)
  7. Add a squash sheet, then a layer of the pan mixture
  8. Repeat until all the ingredients are used
  9. Save a little bit of the pan mixture to cover the top of the lasagne
  10. Bake in the oven for 45 minutes, then sprinkle the grated cheese on top
  11. Put back in the oven for 15 minutes, until the top goes crispy brown

This is a really moorish meal. Enjoy!
