Shakshuka sounds like a sneeze…but this Middle Eastern favourite is a delicious way to cook your eggs. Shakshuka loosely translates to “all mixed up,” and is traditionally cooked in a skillet for breakfast—however I could eat it for breakfast, lunch and dinner. 🙂

Time To Prepare

45-50 minutes

Ingredients (serves 4-6 people)

  • Lard / coconut oil for cooking
  • 2 large onions, halved and thinly sliced
  • 2 large red peppers, seeded and thinly sliced
  • 4 garlic cloves
  • 1t ground cumin
  • 1t paprika
  • ⅛ t cayenne pepper
  • 1 can of whole plum tomatoes with juices
  • ¾ t salt, or to taste
  • ¼ t black pepper, or to taste
  • 150g feta cheese, crumbled (optional if Paleo)
  • 6 large free range eggs
  • Freshly chopped coriander, for serving

Directions

  1. Heat oven to 190°C / 375°F / or gas mark 5
  2. Heat oil in a large skillet over medium-low heat
  3. Add sliced onions and red peppers. Cook gently until very soft, about 18-20 minutes
  4. Add garlic and cook until soft, about 1-2 minutes
  5. Stir in cumin, paprika and cayenne, cook for 1 minute
  6. Pour in plum tomatoes and season with salt and black pepper
  7. Simmer until tomatoes have thickened, about 8-10 minutes
  8. Stir in feta (optional)
  9. Gently crack eggs into skillet over tomatoes
  10. Season with salt and black pepper
  11. Transfer skillet to oven and bake until the eggs are just set, 7-12 minutes depending on how you like your eggs.

Serve with some fresh coriander and enjoy your Shakshuka.
