A healthy low-carb high-protein Tuna salad under 500 calories to make for any time of the year. Great for a packed lunch or picnic. Primal approved.

  • Serves: 1 person.

Tuna Salad Ingredients

  • ¾ ball of mozzarella cheese (94g / 3.3 oz) – Buffalo if possible
  • ½ can of drained tuna (60g / 2 oz)
  • 1 cup of  spinach leaves (30g / 1 oz)
  • ½ cucumber (150g / 5 oz)
  • 1 medium tomato (123g / 4 oz)

Dressing

    • A dash of salt and pepper
    • 1t mixed herbs
    • ½T olive oil
    • ½T apple cider vinegar

Directions

  1. Put the tuna and spinach in a bowl.
  2. Cut the mozzarella, cucumber and tomato into bite size pieces then add to the bowl.
  3. Mix the raw salad, ensuring to break up the tuna.
  4. Put together the dressing in a glass or jug.
  5. Pour the dressing over the salad. Enjoy!!
